Cooking Instructions
This salad is categorized as a main dish because we have it like dinner, but it could also be served as a salad.
Instructions:
1. Cut the cabbage on stripes using mandolin or cutting it with sharp knife.
2. Cut the carrots and red pepper to thin 3 cm long stripes.
3. Cut the bacon on 2x1 cm pieces and on medium heat fry it without adding any oil. If you have ( by chance) home made bacon than the frying should take 3-4 min. For store bought fry it util the fat changes the color to light brown.
4. In the same skillet with the bacon fat saute the carrots and red pepper until they look glassy. At the end add 2 minced cloves of garlic Saute for 1 min.
5. Roast one hand of walnuts, crushed and salted.
6. While the bacon, carrots and peppers are cooling prepare the dressing. In a bowl mix together 2 tbsp of greek yougurt, 1 tsp Doin mustard, 2 tbsp of mayonnaise, juice from 1 smaller lemon, 1 tsp of salt, 1/2 tsp of black pepper, 2 tsp dried dill, 1 tsp dried mint and 1 tsp of ground. smoked paprika. Mix well to get consistent sauce.
7. Put everything together in the larger bowl: the cabbage, carrot and paprika stripes, bacon pieces and walnuts. Mix lightly than pour the dressing and mix well.
